I'm still maintaining my weight with THM, but I'm learning more about the theory behind food and overall nutrition and how exercise and fitness ties into it all. One site I've discovered is Dr Maffetone's. He has several books and info on his website that teach you to truly customize a controlled carb lifestyle, as THM, for yourself.
I don't expect to live forever, and most certainly don't want to do so. I just want my years to be productive and functional, both mentally and physically.
Despite work, homeschool, and finding time for some fun, I still cook 3 meals a day for 5 people. Some are extravagant while others are quick and simple. Today's lunch was delayed due to chores, algebra, working on scissor skills with my toddler, and getting the oldest out the door for joint enrolled classes.
I needed simple.
Some items are pantry staples, and tuna should be one, in my opinion.
I made up a quick tuna salad that is healthy and filling. My personal option was an S-helper in the THM world as I had it on a single slice of Ezekiel bread, but it could be S on 2 light rye Wasa, a Jospeh's pita, lettuce wrap or on a salad.
For a full out crossover, add an apple or another fruit on the side.
Kimi's Favorite Tuna Salad
1 can tuna in water
1 Tbsp mayo
1 Tbsp Greek yogurt, plain, non-fat
1 rib of celery, finely chopped
1 green onion, finely chopped
1 Tbsp slivered or chopped almonds
Mix all ingredients together and enjoy!
